Unfortunately No, I may offer eggless cakes in the future but cannot guarantee it to be allergen free. The home kitchen cannot be certified to be free from major allergens such as: milk, eggs, fish, Crustacean, shellfish, tree nuts, walnuts, nuts, peanuts, wheat, and soybeans etc. and there is always a slight risk of cross contamination that may occur.
I understand your concern, it's due to limitations on ingredients that can be used and sold under cottage food law. I chose to completely follow the cottage food law guidelines as home based vendor(HBV). Another thing is the financial aspect of having the recipes tested and approved for shelf stability. I am a small business and just starting out and I do not have a huge investment at my disposal to have number of recipes tested but surely I will get there eventually.
So my dream is to be able to open a brick & mortar bakery one day to offer all the delicious cakes and bakes out there it's a long journey...and I Thank you for being a part of it. Let me tell you though... my "Signature chocolate" flavor is a fan favorite!
Yes, My business is registered with the State , I also have the ServeSafe Food handler certification which is a state requirement and operate my small baking business in compliance with the cottage food laws of the state and county.
While it is possible to ship cakes , it's not something as a small business I can offer. Legally shipping is allowed within state of Indiana, but the cost of shipping is too high and not feasible at this time. The farthest distance my custom made cake travelled by car is 45 minutes and made it to it's destination safely without damages (confirmed by the client). I think it can travel even further if all instructions are followed.
I ensure and take care that the cake is cold enough and have enough support dowels in place for stability and I also provide you with a cake care guide with travel instructions. All said and done still travelling long distances with a custom cake carries a slight risk of the cake being damaged if things go wrong and business will not be held liable for it.
Very good question! I prefer 2 weeks notice but 7 days is also acceptable because to make a custom designed cake it takes a lot of time and effort, from meticulously planning, making fondant artwork, mixing frosting colors to create exact tone/shade of color, to baking and decorating, sometimes practicing techniques before executing the design on actual cake, some of the intricate fondant work has to be made in advance so that they have time to dry out completely.
As a cottage baker I also have other responsibilities , commitments and other aspects of the business to handle so an advance notice helps me to organize my time in an efficient manner.
Firstly, there are credit card processing fees incurred by the business when a transaction is made. Secondly, creating custom designs , need special tools, molds or ingredients that need to be ordered ahead of time and these items are specific to the customer's order, hence the cost cannot be refunded even if the customer decides to cancel their order. Thirdly, once a customer confirms their order by paying the deposit ,the date is blocked for them and business may turn down potential orders.
However, business understand life happens and there are situations beyond our control therefore I'm ready to work with you on case by case basis. Business reserves the right to decide whether to refund full, part or no amount.
